SUS SCROFA DOMESTICUS


Dans un contexte de monopole des grands distributeurs, de contraintes hygiéniques réglementaires et de déclin du monde agricole, il existe encore quelques amateurs qui perpétuent dans nos campagnes la fabrication de charcuteries artisanales.

Le «cochon», pratique ancestrale, est élevé avant d’être tué, puis sa viande travaillée. Peu de parties de la bête ne sont pas utilisées. Les produits obtenus sont séchés et peuvent être conservés plusieurs mois avant d’être consommés.

Cette tradition, pouvant paraître anachronique, voir barbare, à nos yeux de consommateurs candides, prend pourtant du sens à une époque où les questionnements sur la qualité de notre alimentation deviennent essentiels, car elle est sans aucune comparaison possible avec les conditions d’élevage et d’abatage intensifs. Pourra-t-elle cependant résister au temps qui passe et emporte avec lui les sachants ?

A travers mes photographies, mon intention est de témoigner de cette pratique tout en les confrontant à la simplicité et l’authenticité de la monochromie du procédé Cyanotype.


In the context of the monopoly of large distributors, regulatory hygiene constraints and the decline of the agricultural world, there are still some amateurs who perpetuate in our countryside the manufacture of artisanal delicatessens.

The "pig", ancestral practice, is high before being killed, then its meat worked. Few parts of the beast are not used. The products obtained are dried and can be stored for several months before being consumed.

This tradition, which may seem anachronistic, even barbaric, in our eyes as candid consumers, nevertheless makes sense at a time when questions about the quality of our diet become essential because it is without any comparison with the conditions of breeding and intensive slaughterhouses. Will it be able to resist the passing time and carry with it the knowing ones?

Through my photographs, my intention is to witness this practice while confronting them with the simplicity and authenticity of the monochromy of the Cyanotype
